Lebanese Fish

Kevin cooked this for us the other night. It was really yummy. The recipe says to marinade for 2 hours in the refrigerator, but he didn't. I'm not sure it really needs it, considering that it was very tart (but good). It's a great way to cook tilapia (which is what we cooked).

Samak bi Khal: Marinated Fish Fillets

2 lbs. white fish fillets (tilapia is wonderful with this)
1 cup olive oil
2/3 cup vinegar
1/4 tsp. cayenne
1 1/2 tsp. salt
1/2 tsp pepper
1 tsp. dry sage
2 Tbsp. parsley (finely chopped)
1 egg (well beaten)

Place fish in a mixing bowl with olive oil and vinegar. Refrigerate in marinade for 2 hours. Set oven at 450 degrees F. Drain and place fish in a buttered baking dish. Sprinkle with seasonings. Add parsley to beaten egg and pour over fish. Bake for 10-15 minutes, checking to make sure after ten minutes that fish is not becoming overcooked. Serve with fresh vegetables and lemon wedges.

P.S. A great side dish to this would be the
Lebanese Salad and accompanying dressing that I posted a few months back... and some rice pilaf with a chicken flavored broth would be lovely.

Merry Christmas to you as well, Kathryn! Thanks for stopping in and commenting. I don't do much to promote this blog since it is my own catalogue of sorts... and I am mainly making it for myself. On the other hand, I still really enjoy comments to know that others are enjoying it as well. So, thank you again, and I'm sure you will love the cook-book. The fish, the Lebanese cucumber salad, the dressing, and the hummus recipes have all been great (we have been glad we bought that cookbook so far). :)
